Choose Your Meal

My entire family gathered around the dinner table… it’s a reoccurring dream I have often. Talking, laughing, passing food to one another – really and truly enjoying one another’s company. Unfortunately, busy schedules make it nearly impossible for us as a family to eat together every night for dinner. Like most families we are juggling work, sports, tutoring and more. But just because we can’t eat dinner together every night doesn’t mean I have to give up on my dream of family meals completely. I’ve learned if you want something bad enough, you have to make it happen.

Of course it was disappointing when obligations began to prevent us from eating dinner together, but there are at least two other meals during the day. So, taking a cue from my own childhood – we’ve made breakfast the time when we gather and eat together as a family. There are fewer side dishes (and a lot more syrup) involved, but we are still talking, laughing and enjoying one another’s company. Not to mention, it’s a great way to start the day.

So, if you’re struggling trying to make family dinner work, make the change – choose your meal. It’s not important whether you’re eating breakfast, lunch or dinner together…what’s important is that you’re taking the time, any time, to eat together and spend time together – as a family.

If you happen to follow our example and make breakfast your family’s meal of choice, here’s one of our favorite breakfast recipes:

Thinnies Recipe

Ingredients:

  • 2 eggs
  • 1 1/2 cup milk
  • 1 cup flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 tablespoon oil

Directions:

Beat all ingredients together until smooth. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each thinnie. Brown on both sides and serve hot. (Don’t worry, it takes some practice flipping ‘em, but you’ll be a pro quick enough!) We like to keep the toppings simple: butter and syrup or butter and granulated sugar… but the sky’s really the limit. Jam, lemon, peanut butter, chocolate sauce. You could top thinnies with just about anything and they’d be tasty!
